Spanish Rice recipe

This is one of my fast, easy recipes when I don't have time to cook.  Our interns on the farm have really enjoyed this. You can add any type of meat and cheese for a main course or have it as a side. ( This recipe was shared with me about 16 years ago from Kay Teachout, thanks Kay!)
Turn oven on 350* or use crook pot
Butter a glass casserole dish with lid (about a 1 1/2 quart size)or crock pot 

Add in the order given then stir until mixed.

1 1/4 C. Long grain rice (I do soak the rice over night and then drain and rinse before assembling.)
1/4 C. Butter (dotted over rice or if you are around you can stir about 10 min in to cooking time)
1 8 -12 oz jar of pizza sauce or tomato sauce or speg sauce (about a cup and half)
1/2 C. salsa
1 8-12 oz water that is rinsing out the jar of tomato sauce (1 1/2 cup water) May need to add      more later
garlic salt (okay as many of my friends and interns know I don't like to measure if I don't have to, so its about a 1/2 tsp I just sprinkle on)
Cover and Bake 1 hour at 350*
In a crook pot turn on low in the morning about 7 am and it is ready for lunch. so about 5 hours.
we have sped it up on high and I think it was done in 3-4 hours.
after about 45- min stir and check to see if it needs more water, about 1/2 a cup is usually what it takes but I have used up to a cup.

This recipe can be doubled easily.

We like to sauté  onions, brown some beef or pork,  or some left over chicken or even turkey, stir that in when finished and then top with some cheese of your liking.
Enjoy a quick easy meal.
